One of the most famous and best Cahors wines, Château du Cédre, was selected by Antoine Hernandez, sommelier of the Robuchon group for the new Paris store of Joël Robuchon.
The three-star chef Joel Robuchon answered the requests of his customers
by opening a wine cellar near his famous Atelier. Located 3 rue
Paul-Louis Courier, on the other side of the boulevard Saint-Germain,
the new store seems to fit perfectly the Black Wine of Malbec by its
decoration: black and red walls with a slate-grey ground.
The vineyards of the Château du Cèdre lie on the Bru hillsides situated
on the commune of Vire-sur-Lot. The vines are
cultivated on the best wine-growing soils of Cahors: the
clay-limestone terrain is very stony, and the vines need to sink their
roots deep down into the red, sandy, iron-rich soil. Under the direction of
the Verhaeghe brothers, the Château du Cèdre makes powerful and deeply
colored wines, like the great ‘black' wines of former days.
