In a professional, masterful and passionate manner, typical of the great wine specialist that he is, Olivier demonstrated to all those of us who were lucky enough to find a place in one of the crowded seminary rooms at Vinexpo, how enormously Cahors wines have improved since the early 1990s and what fabulous tasting qualities these wines offer. Olivier explained that Cahors is one of the most traditional wine producing regions in the world (…). Olivier, who has been one of the pioneers in rediscovering Cahors wines, wants to share with us his growing passion for these splendid wines. He wants people to know more about Cahors. He is most impressed by the huge range of possible food/wine pairings offered by Cahors wines. He explains, that one of the particular virtues of Cahors wines is that it fits perfectly with red meat, game and lamb, as these full bodied and good flavoured wines balance perfectly with this kind of food. Furthermore, the ripe tannins, the freshness and acidity, so typical in Cahors wines, are extremely well-suited to improve the digestion of rich dishes. The near black colour of young Cahors wines evolves with maturity, as do the aromas ot these wines (…). In order to make really great wines, Cahors producers have optimized their winemaking techniques (…).
The wines of Cahors have already become a big success in Canada, where Cahors holds the forth rank of wine importations. But Cahors can be found in nearly all other countries of the world, in restaurants, at retails shops or on your supermarkets shelves”.
