The wine of Chateau Triguedina is made by Jean-Luc Baldès. The property belongs to his family since 1830. His wines are very typical of the Cahors region.
The wines of Cahors are supposedly very good with game and heavy meat. Those of J.L. Baldès are no exception if we go by the book. But why go by the book when you can be creative? Having a leftover of chile con carne - tasty and strong after over 24 hrs of macerating in the sauce - I opened a bottle of Triguedina 2001. Dark red, the wine has a first nose of very ripe red fruits: blackcurrant is very dominant. In the mouth it is so fresh and tasty we almost forgot to eat. It matched beautifully with the chile con carne. To finish our meal on a softer note, we had a few dark chocolate pieces on our last drops of the wine.
